Soup
  • 1 lb ground beef
  • 1 tbsp olive oil if needed
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 28 oz crushed tomatoes
  • 14.5 oz diced tomatoes
  • 6 cups beef broth
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 0.5 tsp crushed red pepper flakes optional
  • 10 lasagna noodles, broken
  • 1 cup mozzarella, shredded
  • 0.5 cup parmesan, grated
  • salt and pepper to taste
Cheese Topping
  • 1 cup ricotta cheese
  • 0.5 cup parmesan cheese
  • 1 tsp garlic powder
  • salt and pepper

Method
 

  1. Brown ground beef in a large pot.
  2. Add onion and garlic; cook until softened.
  3. Stir in tomato paste.
  4. Add crushed tomatoes, diced tomatoes, broth, and seasonings.
  5. Add broken lasagna noodles and simmer until tender.
  6. Mix ricotta topping ingredients together.
  7. Stir mozzarella and parmesan into the soup.
  8. Serve topped with ricotta mixture and basil.

Notes

Add more broth if noodles absorb too much liquid. Ricotta topping is essential for true lasagna flavor.
