Ingredients
  

Roast Beef
  • 3 lb beef roast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 3 cloves garlic minced
Cranberry Balsamic Sauce
  • 1 cup cranberry sauce whole berry
  • 1/3 cup balsamic vinegar
  • 2 tbsp brown sugar
  • 1/2 cup beef broth

Equipment

  • Oven-safe skillet
  • Aluminum foil

Method
 

  1. Season beef with olive oil, salt, and pepper.
  2. Sear beef on all sides until browned.
  3. Whisk cranberry sauce, balsamic vinegar, brown sugar, and beef broth.
  4. Pour sauce over roast, cover, and bake at 325°F for 2½–3 hours.
  5. Rest, slice, and serve with sauce.

Notes

For best flavor, baste the roast with sauce halfway through cooking.
