  • 4 boneless skinless chicken breasts
  • 4 oz brie cheese sliced
  • 0.5 cup cranberry sauce whole-berry or homemade
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 clove garlic minced
  • salt and pepper to taste
  • 1 tablespoon balsamic glaze or honey optional, for serving

Method
 

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. Cut pockets in each chicken breast and stuff with brie, cranberry sauce, and rosemary.
  3. Season chicken with salt, pepper, and more rosemary.
  4. Heat olive oil and butter in a skillet and sear chicken 2–3 minutes per side.
  5. Add garlic to pan during last minute of searing.
  6. Transfer skillet to oven and bake 15–18 minutes until cooked through.
  7. Let rest 5 minutes before slicing. Drizzle with glaze or honey and garnish with rosemary.

Notes

Perfect for using up leftover cranberry sauce and holiday brie. Serve with mashed potatoes or rice.
