Ingredients
  

Christmas Cake
  • 2 cups fresh cranberries
  • 1 cup granulated sugar (for cranberries)
  • 1 cup unsalted butter, softened
  • 1.25 cups granulated sugar (for batter)
  • 3 eggs
  • 2 tsp vanilla extract
  • 1 tsp orange zest optional
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder

Method
 

  1. Toss cranberries with 1 cup sugar and set aside.
  2. Cream butter and remaining sugar until fluffy.
  3. Add eggs, vanilla, and orange zest.
  4. Whisk dry ingredients and add to wet mixture.
  5. Fold in sugared cranberries.
  6. Spread into a greased baking dish.
  7. Bake at 350°F for 45–55 minutes.
