  • 1 lb ground beef
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 packet taco seasoning
  • 10 oz diced tomatoes with green chilies
  • 15 oz black beans drained and rinsed
  • 15 oz corn drained
  • 1 cup beef broth
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese plus more for topping
  • 0.5 cup heavy cream
  • 0.5 tsp smoked paprika
  • 0.5 tsp cumin optional
  • Salt and black pepper to taste
  • Fresh cilantro, jalapeños, sour cream, tortilla chips for garnish

Method
 

  1. Brown ground beef in a large pot until fully cooked. Drain excess fat.
  2. Add onion and garlic; sauté until fragrant.
  3. Stir in taco seasoning, smoked paprika, and cumin; cook 1 minute.
  4. Add tomatoes, corn, beans, and broth. Stir to combine and bring to a simmer.
  5. Lower heat; stir in cream cheese until melted and smooth.
  6. Add cheddar cheese and heavy cream; stir until creamy.
  7. Simmer 5–10 minutes, then serve hot with toppings.

Notes

For a spicier version, add jalapeños or chipotle peppers. Great for meal prep and freezer-friendly.
