Method
- Cook pasta until al dente. Reserve 1/2 cup pasta water, then drain.
- Season and cook chicken in butter and olive oil until golden. Remove and set aside.
- Sauté mushrooms in butter until golden. Add garlic and cook briefly.
- Pour in cream and broth. Add seasoning and parmesan, stirring until smooth.
- Return pasta and chicken to the pan. Toss to coat, adding pasta water if needed.
- Garnish with parsley and extra parmesan before serving.
