Main Ingredients
  • 12 oz pasta (fettuccine, penne, or tagliatelle)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 boneless, skinless chicken breasts, sliced thin
  • 2 cups sliced mushrooms
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley
  • salt and black pepper to taste

  • Large skillet

Method
 

  1. Cook pasta until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Season and cook chicken in butter and olive oil until golden. Remove and set aside.
  3. Sauté mushrooms in butter until golden. Add garlic and cook briefly.
  4. Pour in cream and broth. Add seasoning and parmesan, stirring until smooth.
  5. Return pasta and chicken to the pan. Toss to coat, adding pasta water if needed.
  6. Garnish with parsley and extra parmesan before serving.
