Casserole
  • 3 cups cooked shredded chicken
  • 1 tbsp olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 8 oz cream cheese softened
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp paprika
  • 0.5 tsp Italian seasoning
  • 5 cups fresh spinach or 1.5 cups frozen, thawed and drained
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup shredded Parmesan cheese
  • salt and pepper to taste

  • cooked bacon pieces optional
  • sautéed mushrooms optional
  • red pepper flakes optional
  • fresh parsley optional garnish

Equipment

Method
 

  1. Preheat oven to 350°F and grease a 9×13 dish.
  2. Sauté onion in olive oil, then add garlic and spinach.
  3. Add cream cheese until melted.
  4. Whisk in heavy cream and broth.
  5. Season with garlic powder, onion powder, paprika, and Italian seasoning.
  6. Stir in chicken and cheeses.
  7. Transfer to casserole dish and top with extra cheese.
  8. Bake 20–25 minutes until bubbly.

Notes

Let casserole rest before serving so sauce thickens. Add mushrooms or bacon for extra flavor.
