Ingredients
  

Chicken & Sauce
  • 2 tbsp olive oil
  • 1 lb boneless skinless chicken breasts, diced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 0.5 cup crumbled feta cheese
  • 2 tbsp lemon juice
  • 1 tbsp butter optional
For Serving
  • 2 cups cooked rice or quinoa
  • 1 cup baby spinach, chopped
  • 0.5 cup cherry tomatoes, halved
  • fresh parsley or dill for garnish

Equipment

Method
 

  1. Heat olive oil and cook seasoned chicken until golden and cooked through.
  2. Sauté garlic in the same pan until fragrant.
  3. Add broth, cream, and butter; simmer until slightly thickened.
  4. Stir in feta and lemon juice; return chicken and add spinach to wilt.
  5. Serve over rice or quinoa, topped with tomatoes, extra feta, and herbs.

Notes

For extra tang, add a spoonful of Greek yogurt to the sauce before serving.
