  • 2 lb chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 12 oz mushrooms, sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp Italian seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 tbsp cornstarch optional
  • 1/2 cup parmesan cheese grated

Method
 

  1. Preheat oven to 375°F (190°C). Season chicken with salt, pepper, and thyme.
  2. Sear chicken in olive oil until golden; transfer to casserole dish.
  3. Sauté onion in butter, then add garlic and mushrooms.
  4. Add broth, cream, Italian seasoning, and parmesan; simmer to thicken.
  5. Pour sauce over chicken and bake 25–30 minutes.
  6. Garnish with parsley and serve warm.

Notes

Add spinach or bacon for extra flavor.
