Ingredients
  

Main Ingredients
  • 8 oz pasta penne or rotini
  • 2 chicken breasts sliced
  • 1 tbsp olive oil
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 onion sliced
  • 2 cloves garlic minced
  • 2 tbsp fajita seasoning
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 1 cup shredded cheese cheddar or Monterey Jack

Equipment

Method
 

  1. Cook pasta according to package directions and drain.
  2. Cook seasoned chicken in skillet until done and set aside.
  3. Sauté peppers and onion.
  4. Add garlic and seasoning.
  5. Stir in cream and broth, then cheese until smooth.
  6. Return chicken and pasta to skillet and toss to coat.

Notes

Add lime juice at the end for brightness. Adjust spice level to taste.
