Ingredients
  

Soup Base
  • 1 1/2 lb chicken breast or thighs
  • 2 tbsp butter or olive oil
  • 1 medium onion diced
  • 2 medium carrots sliced
  • 2 stalks celery sliced
  • 3 cloves garlic minced
  • 3 cups potatoes peeled and diced
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper

Equipment

  • Large pot
  • Cutting board
  • Knife

Method
 

  1. Sauté onion, carrots, and celery in butter until softened.
  2. Add garlic and chicken, season, and pour in broth.
  3. Add potatoes and simmer until tender.
  4. Remove chicken, shred, and return to pot.
  5. Stir in cream and heat through before serving.

Notes

Mash some potatoes in the pot for a thicker soup.
