Ingredients
  

Pasta & Chicken
  • 12 oz spaghetti
  • 2 cups shredded chicken
Sauce
  • 2 tablespoons butter
  • 1 small onion diced
  • 3 cloves garlic minced
  • 10 oz diced tomatoes with green chiles canned
  • 1 cup chicken broth
  • 8 oz cream cheese softened
  • 1 cup cheddar cheese shredded
  • 0.5 teaspoon paprika
  • 0.5 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
Topping
  • 1 cup cheddar cheese shredded

Equipment

Method
 

  1. Cook spaghetti until al dente; drain.
  2. Sauté onion in butter; add garlic.
  3. Add tomatoes and broth; melt cream cheese into mixture.
  4. Stir in cheddar and seasonings.
  5. Add shredded chicken and spaghetti; toss to coat.
  6. Transfer to baking dish; top with cheese and bake 20 minutes.

Notes

For extra creaminess, add 1/2 cup heavy cream.
