Ingredients
  

Soup Base
  • 1 lb chicken breast diced
  • 1 tbsp olive oil
  • 1 cup onion diced
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 3 cloves garlic minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 12 oz cheese tortellini
  • 2 cups spinach fresh
  • 1 cup Parmesan cheese grated

Equipment

  • Large pot or Dutch oven
  • Cutting board
  • Chef’s knife
  • Wooden spoon

Method
 

  1. Cook diced chicken in olive oil until golden and cooked through. Remove and set aside.
  2. Sauté onion, carrots, and celery until softened. Add garlic and seasoning.
  3. Add broth and cream, then cook tortellini until tender.
  4. Return chicken to pot, add spinach and Parmesan, and stir until creamy.

Notes

Best enjoyed fresh; add extra broth when reheating if needed.
