Method
- Cook pasta in salted boiling water until al dente. Reserve pasta water before draining.
- Sauté garlic in olive oil over medium heat until fragrant.
- Add tomato paste and cook until slightly darkened.
- Stir in chili flakes and chili oil and cook briefly.
- Reduce heat and stir in heavy cream until smooth.
- Add Parmesan, salt, and pepper and stir until melted.
- Toss pasta with sauce, adding reserved pasta water as needed.
- Serve immediately with extra Parmesan and herbs.
Notes
Adjust chili flakes for desired spice level. Use freshly grated Parmesan for best texture.
