  • 1 tbsp olive oil
  • 1 lb Italian sausage casings removed
  • 3 cloves garlic minced
  • 2 cups broccoli florets
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated parmesan cheese plus extra for serving
  • 2 tbsp butter
  • 1 (20-ounce) pkg cheese tortellini fresh or refrigerated
  • 1 tsp Italian seasoning
  • salt and pepper to taste
  • pinch red pepper flakes optional
  • fresh parsley or basil for garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat and brown sausage until fully cooked.
  2. Remove sausage and set aside, leaving some drippings in the pan.
  3. Sauté garlic for 30 seconds until fragrant.
  4. Pour in chicken broth and cream, scraping up any bits on the bottom.
  5. Add tortellini and simmer uncovered for 6–8 minutes until tender.
  6. Add broccoli florets and cook until just tender, about 3–4 minutes.
  7. Return sausage to the pan, stir in parmesan, butter, and Italian seasoning.
  8. Season with salt, pepper, and red pepper flakes. Garnish and serve.
