Ingredients
  

  • 1 lb ground turkey
  • 3 cups fresh baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 0.5 cup plain Greek yogurt or light cream cheese
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 0.5 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Heat olive oil in a skillet. Add onion and cook until softened.
  2. Add garlic and cook until fragrant.
  3. Brown ground turkey until fully cooked. Season with spices.
  4. Add cherry tomatoes and cook until softened.
  5. Stir in Greek yogurt or cream cheese until creamy.
  6. Fold in spinach until just wilted.
  7. Taste, adjust seasoning, and serve hot with rice or quinoa.
