Ingredients
  

Coleslaw Base
  • 4 cups green cabbage shredded
  • 1 cup purple cabbage shredded
  • 1 cup carrots grated
Creamy Dressing
  • 0.75 cup plain Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper

Method
 

  1. Combine shredded cabbage and carrots in a large bowl.
  2. Whisk together yogurt, olive oil, vinegar, mustard, and honey.
  3. Season dressing with salt and pepper.
  4. Pour dressing over vegetables and toss gently.
  5. Chill for 15 minutes before serving.

Notes

For best texture, chill briefly before serving to allow flavors to meld.
