Ingredients
  

Pasta
  • 12 oz pasta linguine or spaghetti
  • 1 tbsp salt for pasta water
Lemon Feta Sauce
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup feta cheese crumbled
  • 1 lemon zest from 1 lemon
  • 1 lemon juice from 1 lemon
  • 0.5 tsp crushed red pepper flakes optional
  • 0.5 tsp black pepper
  • 0.5 cup reserved pasta water
  • 2 tbsp butter
  • fresh basil for garnish

Equipment

  • Large pot
  • Skillet
  • Whisk
  • Tongs

Method
 

  1. Cook pasta in salted water until al dente. Reserve pasta water.
  2. Sauté garlic in olive oil.
  3. Add cream and simmer; whisk in feta until melted.
  4. Stir in lemon zest, lemon juice, seasonings, and butter.
  5. Add pasta and toss with sauce, adding pasta water as needed.
  6. Garnish with basil and serve warm.

Add spinach or chicken for extra protein
