Ingredients
  

Pasta
  • 12 oz pasta
Sauce
  • 1 cup ricotta cheese whole milk
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp lemon zest
  • 3 tbsp lemon juice fresh
  • 1/2 cup parmesan cheese finely grated
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Equipment

  • Mixing bowl
  • Whisk or spoon

Method
 

  1. Cook pasta in salted water and reserve pasta water.
  2. Mix ricotta, olive oil, garlic, lemon zest, lemon juice, parmesan, salt, and pepper.
  3. Add hot pasta and toss, loosening with pasta water as needed.
  4. Serve immediately with herbs and extra parmesan.

Notes

Adding hot pasta helps the ricotta sauce melt and become silky.
