Ingredients
  

Pasta Salad
  • 12 oz short pasta rotini or shells
  • 2 cups corn kernels roasted or charred
  • 3 4 mayonnaise cup
  • 1 2 sour cream cup
  • 3 4 cotija cheese, crumbled cup
  • 1 4 fresh cilantro, chopped cup
  • 2 tbsp lime juice fresh
  • 1 clove garlic, minced
  • 1 tsp chili powder
  • 1 2 smoked paprika tsp

Method
 

  1. Cook pasta until al dente, drain, and cool completely.
  2. Roast or char corn until lightly golden, then cool.
  3. Whisk mayonnaise, sour cream, lime juice, garlic, and spices.
  4. Toss pasta with dressing, then fold in corn, cheese, and cilantro.
  5. Chill for at least 30 minutes before serving.

Notes

Best served chilled. Adjust seasoning after refrigeration.
