Ingredients
  

Soup Base
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 4 cups russet potatoes peeled and diced
  • 2 cups ham diced
  • 4 cups chicken broth

Equipment

  • Large pot or Dutch oven
  • Wooden spoon

Method
 

  1. Sauté onion, celery, and garlic in butter and oil.
  2. Stir in flour and slowly add broth to create a base.
  3. Add potatoes and simmer until tender.
  4. Mash some potatoes, then add ham, milk, and cream.

Notes

Soup thickens as it cools. Add extra milk or broth when reheating.
