  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil or butter
  • 1 packet (1 oz) ranch seasoning mix
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp black pepper
  • 8 oz cream cheese softened
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 1 cup shredded cheddar cheese
  • fresh parsley or chives for garnish

Method
 

  1. Season chicken with half of the ranch mix, garlic powder, onion powder, and pepper.
  2. Heat olive oil in a skillet and sear chicken 3–4 minutes per side until golden. Remove and set aside.
  3. Add cream cheese, chicken broth, and remaining ranch mix to skillet. Stir until smooth.
  4. Add heavy cream and cheddar; stir until melted and creamy.
  5. Return chicken to skillet and simmer 10–12 minutes until cooked through.
  6. Garnish with parsley and serve hot.

Notes

Delicious over mashed potatoes, rice, or noodles. Add crispy bacon for extra flavor.
