Pasta
  • 12 oz pasta
  • 3 cups butternut squash cubed
  • 1 garlic bulb
  • 2 tbsp olive oil
  • 1 cup vegetable broth
  • 0.5 cup heavy cream
  • 0.5 cup parmesan cheese grated
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 400°F and prepare a baking sheet.
  2. Roast butternut squash cubes and garlic bulb with olive oil for 25–30 minutes.
  3. Cook pasta in salted water according to package instructions.
  4. Blend roasted squash, garlic, and vegetable broth until smooth.
  5. Pour sauce into skillet and stir in cream, parmesan, salt, and pepper.
  6. Add cooked pasta and toss until well coated.

Add spinach, mushrooms, or grilled chicken for extra flavor and protein.
