  • 2 lbs ripe tomatoes halved
  • 1 garlic bulb
  • 1 onion sliced
  • 2 tbsp olive oil
  • 3 cups vegetable broth
  • 0.5 cup heavy cream

Method
 

  1. Roast tomatoes, onion, and garlic at 400°F for 35–40 minutes.
  2. Transfer to pot with broth and simmer 10 minutes.
  3. Blend until smooth and stir in cream.
  4. Adjust seasoning and serve warm.

Notes

Add sugar if tomatoes are overly acidic.
