Ingredients

  • 12 oz pasta
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 10 oz Rotel tomatoes undrained
  • 4 oz cream cheese softened
  • 1 cup heavy cream
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded

  • Large skillet
  • Wooden spoon

Method
 

  1. Cook pasta until al dente. Drain and set aside.
  2. Sauté onion in olive oil, then add garlic.
  3. Brown ground beef and drain excess grease.
  4. Add seasonings and Rotel tomatoes; simmer briefly.
  5. Stir in cream cheese and heavy cream until smooth.
  6. Add shredded cheeses and melt.
  7. Combine cooked pasta with sauce and simmer 2–3 minutes.

Notes

Use freshly shredded cheese for best melting. Adjust spice level with mild or hot Rotel.
