Method
- Cook pasta until al dente. Drain and set aside.
- Sauté onion in olive oil, then add garlic.
- Brown ground beef and drain excess grease.
- Add seasonings and Rotel tomatoes; simmer briefly.
- Stir in cream cheese and heavy cream until smooth.
- Add shredded cheeses and melt.
- Combine cooked pasta with sauce and simmer 2–3 minutes.
Notes
Use freshly shredded cheese for best melting. Adjust spice level with mild or hot Rotel.
