  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp onion powder
  • 0.5 tsp paprika
  • 1 tbsp flour
  • 1 cup chicken broth
  • 0.75 cup sour cream
  • 0.5 cup heavy cream
  • 0.5 cup shredded mozzarella (optional)
  • 2 tbsp chopped parsley
  • 1 tbsp chopped chives or green onions, for garnish

Method
 

  1. Season chicken with salt, pepper, paprika, and onion powder.
  2. Sear chicken in olive oil and butter until golden and cooked through. Remove and set aside.
  3. Caramelize onions in the same skillet until soft and golden.
  4. Add garlic and flour, stir to combine, and cook briefly.
  5. Whisk in chicken broth, then stir in sour cream and heavy cream until smooth.
  6. Return chicken to skillet and simmer until sauce thickens.
  7. Garnish with parsley and chives, then serve warm.

Notes

Avoid high heat after adding sour cream to prevent curdling. Serve with mashed potatoes or buttered noodles.
