  • 4 pieces boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.75 cup grated parmesan cheese
  • 3 cups baby spinach
  • 0.5 teaspoon salt plus more to taste
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes optional
  • 1 teaspoon Italian seasoning
  • 1 tablespoon lemon juice optional
  • fresh parsley for garnish

Method
 

  1. Season chicken with salt, pepper, and Italian seasoning. Sear in olive oil until golden and cooked through.
  2. Melt butter in the same pan and sauté garlic until fragrant.
  3. Add chicken broth, heavy cream, and parmesan. Simmer until slightly thickened.
  4. Stir in spinach until wilted, then return chicken to the pan.
  5. Simmer for a few minutes to blend flavors, garnish with parsley, and serve warm.
