- Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water and drain.
- Sauté garlic in olive oil or butter for 1 minute over medium heat.
- Add spinach and cook until wilted, about 2–3 minutes.
- Pour in cream and stir in Parmesan until melted and smooth.
- Toss pasta in sauce, adding pasta water as needed for creaminess.
- Season with salt, pepper, and lemon juice. Serve immediately with extra Parmesan.
Notes
Add mushrooms, chicken, or shrimp for a heartier version. For vegan, use cashew cream and nutritional yeast.
