  • 8 oz pasta fettuccine, penne, or preferred type
  • 2 tbsp olive oil or butter
  • 3 cloves garlic minced
  • 3 cups fresh spinach roughly chopped
  • 1 cup heavy cream or half-and-half
  • 0.5 cup grated Parmesan cheese
  • 0.25 tsp red pepper flakes optional
  • salt and black pepper to taste
  • 0.5 lemon juiced, optional

Method
 

  1. Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water and drain.
  2. Sauté garlic in olive oil or butter for 1 minute over medium heat.
  3. Add spinach and cook until wilted, about 2–3 minutes.
  4. Pour in cream and stir in Parmesan until melted and smooth.
  5. Toss pasta in sauce, adding pasta water as needed for creaminess.
  6. Season with salt, pepper, and lemon juice. Serve immediately with extra Parmesan.

Notes

Add mushrooms, chicken, or shrimp for a heartier version. For vegan, use cashew cream and nutritional yeast.
