Ingredients
  

Main
  • 12 oz pasta
  • 1 lb chicken breast cubed
  • 2 tbsp olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 14 oz crushed tomatoes
  • 1 tbsp tomato paste
  • 0.75 cup heavy cream
  • 0.5 cup Parmesan cheese grated

Equipment

  • Large pot
  • Large skillet
  • Wooden spoon
  • Colander

Method
 

  1. Cook pasta until al dente. Drain and set aside.
  2. Season and sear chicken until golden and cooked through. Remove and set aside.
  3. Sauté onion and garlic.
  4. Stir in tomato paste and crushed tomatoes; simmer.
  5. Add cream and Parmesan; stir until smooth.
  6. Return chicken and pasta; toss and simmer briefly.

Notes

Reserve pasta water to thin sauce if needed. Add spinach for variation.
