Method
- Season salmon with salt and pepper.
- Heat olive oil and butter in skillet and sear salmon for 3–4 minutes per side.
- Remove salmon and sauté garlic.
- Add sun-dried tomatoes and cook briefly.
- Pour in cream and broth, then add parmesan.
- Add Italian seasoning and optional red pepper flakes.
- Stir in spinach until wilted.
- Return salmon to skillet and simmer 3–5 minutes.
- Garnish with basil and serve.
Notes
Serve over pasta, rice, or mashed potatoes for a complete meal.
