Main Ingredients
  • 4 filets salmon
  • salt and pepper to taste
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 4 cloves garlic minced
  • 1/2 cup sun-dried tomatoes drained and sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup parmesan cheese grated
  • 1 cup spinach
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes optional
  • fresh basil for garnish

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Season salmon with salt and pepper.
  2. Heat olive oil and butter in skillet and sear salmon for 3–4 minutes per side.
  3. Remove salmon and sauté garlic.
  4. Add sun-dried tomatoes and cook briefly.
  5. Pour in cream and broth, then add parmesan.
  6. Add Italian seasoning and optional red pepper flakes.
  7. Stir in spinach until wilted.
  8. Return salmon to skillet and simmer 3–5 minutes.
  9. Garnish with basil and serve.

Notes

Serve over pasta, rice, or mashed potatoes for a complete meal.
