Main
  • 12 oz linguine
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 0.5 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup parmesan, grated
  • 2 cups fresh spinach
  • 1 tbsp lemon juice
  • 1 tsp Italian seasoning
  • 0.5 tsp smoked paprika
  • salt and pepper to taste

Method
 

  1. Cook linguine until al dente.
  2. Season and cook shrimp in butter and oil; set aside.
  3. Sauté garlic and sun-dried tomatoes.
  4. Add cream, broth, and seasonings; simmer.
  5. Stir in parmesan until smooth.
  6. Add spinach and wilt.
  7. Combine pasta and shrimp; toss with sauce.
  8. Finish with lemon juice and serve.

Notes

Add pasta water as needed to keep sauce silky. Serve immediately.
