Ingredients
  

French Toast Base
  • 8 slices brioche bread thick cut
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/3 cup granulated sugar
  • 2 tbsp brown sugar
  • 2 tbsp butter melted
  • 2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
Brûlée Topping
  • 1/4 cup granulated sugar for caramelizing

Equipment

  • Mixing bowls
  • Whisk
  • Baking dish
  • Kitchen torch or broiler

Method
 

  1. Butter a baking dish and arrange bread slices inside.
  2. Whisk eggs, cream, milk, sugars, vanilla, cinnamon, and salt.
  3. Pour custard over bread and refrigerate at least 4 hours or overnight.
  4. Bake at 350°F (175°C) for 35–40 minutes until set.
  5. Sprinkle sugar on top and caramelize with torch or broiler.

Notes

Best served immediately after caramelizing the sugar topping.
