Ingredients
  

Chicken
  • 1 whole chicken 4-5 pounds
  • 6 tbsp unsalted butter softened
  • 5 cloves garlic minced
  • 2 tbsp Creole seasoning
Vegetables
  • 1 lb baby potatoes halved
  • 3 carrots chunked

Equipment

Method
 

  1. Mix garlic butter with seasoning.
  2. Rub butter under and over chicken skin.
  3. Arrange vegetables in roasting pan and place chicken on top.
  4. Roast at 400°F until internal temperature reaches 165°F.

Notes

Broil briefly at end for extra crispy skin.
