Ingredients
  

Zucchini Chips
  • 2 zucchini sliced thin
  • 1 cup breadcrumbs seasoned or panko
  • 0.5 cup Parmesan cheese grated
  • 2 eggs
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 425°F and line baking sheets.
  2. Slice zucchini thinly and pat dry.
  3. Whisk eggs with olive oil.
  4. Mix breadcrumbs, Parmesan, and seasonings.
  5. Dip zucchini into egg then breadcrumb mixture.
  6. Arrange on baking sheets and spray lightly.
  7. Bake 20–25 minutes, flipping halfway.
