Ingredients
  

Fried Zucchini
  • 2 zucchini, sliced into rounds
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 tbsp milk or water
  • 1.5 cups breadcrumbs panko or regular
  • 0.5 cup Parmesan cheese, grated
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
Garlic Aioli
  • 0.5 cup mayonnaise
  • 1 clove garlic, minced
  • 1 tbsp lemon juice fresh
  • 1 tsp Dijon mustard
  • 1 tbsp olive oil

Equipment

  • Skillet or fryer
  • Mixing bowls

Method
 

  1. Slice zucchini and pat dry.
  2. Set up flour, egg wash, and breadcrumb stations.
  3. Dredge zucchini in flour, dip in eggs, and coat in breadcrumbs.
  4. Fry in hot oil until golden and crisp.
  5. Whisk together mayonnaise, garlic, lemon juice, mustard, and olive oil for aioli.
  6. Serve fried zucchini with garlic aioli.

Notes

Use panko for extra crunch. Serve immediately for best texture.
