  • 1 lb gnocchi shelf-stable or refrigerated
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 3 cups fresh baby spinach
  • 0.5 tsp red pepper flakes optional
  • salt and pepper to taste
  • 0.5 cup feta cheese, crumbled
  • 0.5 lemon, zested
  • 1 tbsp lemon juice
  • 2 tbsp butter optional, for richness

Method
 

  1. Heat olive oil in a large nonstick skillet over medium-high heat.
  2. Add gnocchi and cook until golden and crispy on all sides, 8–10 minutes.
  3. Reduce heat to medium; add garlic and red pepper flakes. Cook 30 seconds.
  4. Add spinach and toss until wilted, about 1–2 minutes. Season with salt and pepper.
  5. Remove from heat and stir in feta, lemon zest, and lemon juice.
  6. Optionally, stir in butter for richer flavor.
  7. Serve immediately, garnished with extra feta and olive oil.

Notes

Best enjoyed fresh. Reheat in a skillet with olive oil to maintain crispiness.
