Ingredients
  

  • 1 lb potato gnocchi
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 4 cups fresh spinach
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp dried oregano
  • 0.5 tsp red pepper flakes optional
  • 0.75 cup feta cheese crumbled
  • 0.5 lemon juiced

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add gnocchi in a single layer and cook undisturbed until golden on one side.
  3. Turn and cook until crispy on multiple sides.
  4. Add garlic and sauté briefly.
  5. Stir in spinach and cook until wilted.
  6. Season with salt, pepper, oregano, and red pepper flakes.
  7. Remove from heat and add lemon juice.
  8. Top with feta and serve warm.

Notes

For extra crispiness, avoid overcrowding the pan and allow gnocchi to cook undisturbed before turning.
