- Heat olive oil in a large skillet over medium heat.
- Add gnocchi in a single layer and cook undisturbed until golden on one side.
- Turn and cook until crispy on multiple sides.
- Add garlic and sauté briefly.
- Stir in spinach and cook until wilted.
- Season with salt, pepper, oregano, and red pepper flakes.
- Remove from heat and add lemon juice.
- Top with feta and serve warm.
Notes
For extra crispiness, avoid overcrowding the pan and allow gnocchi to cook undisturbed before turning.
