Ingredients
  

Breaded Tofu
  • 14 oz extra-firm tofu pressed and cubed
  • 1 cup panko breadcrumbs
  • 0.25 cup Parmesan cheese grated
Salad
  • 4 cups romaine lettuce chopped
  • 1 cup croutons

Method
 

  1. Press and cube tofu, then bread using flour, egg, and breadcrumb mixture.
  2. Pan-fry tofu until golden and crispy.
  3. Whisk dressing ingredients until smooth.

For vegan option, use flax eggs and vegan Parmesan.
