  • 1.5 pounds boneless skinless chicken breasts
  • 1 can (28 oz) crushed tomatoes
  • 3 cups chicken broth
  • 4 cloves garlic minced
  • 1 medium onion finely diced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon crushed red pepper flakes optional
Creamy Finish
  • 4 oz cream cheese cubed and softened
  • 1 cup heavy cream
  • 1 cup Parmesan cheese freshly grated
  • 0.5 cup mozzarella cheese shredded
  • 2 tablespoons butter
  • 2 tablespoons flour optional for thickening
  • 0.5 cup fresh basil or parsley chopped, for garnish

Method
 

  1. Add chicken, crushed tomatoes, broth, garlic, onion, and seasonings to crock pot and stir.
  2. Cook on Low for 6–7 hours or High for 3–4 hours.
  3. Remove chicken, shred, and return to the pot.
  4. Add cream cheese, cream, Parmesan, and mozzarella. Stir until melted and creamy.
  5. Optional: Stir in roux made from butter and flour for a thicker soup.
  6. Garnish with basil or parsley and serve warm.

Notes

Add a Parmesan rind while cooking for extra flavor. Serve with garlic bread or pasta for a hearty meal.
