Ingredients
  

Chicken
  • 4 boneless, skinless chicken breasts
Sauce
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 0.75 cup grated Parmesan cheese
  • 0.5 cup sun-dried tomatoes chopped, packed in oil and drained
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.5 tsp crushed red pepper flakes optional
  • 2 tbsp unsalted butter
  • salt and black pepper to taste
  • fresh basil leaves chopped, for garnish

Method
 

  1. Season chicken breasts with salt and pepper.
  2. Combine heavy cream, chicken broth, Parmesan cheese, sun-dried tomatoes, garlic, Italian seasoning, red pepper flakes, and butter in crock pot. Stir to combine.
  3. Add chicken to sauce, ensuring it is coated.
  4. Cover and cook on Low for 240–300 minutes or High for 120–180 minutes, until chicken is tender.
  5. Remove chicken, whisk sauce, then return chicken and spoon sauce over top.
  6. Garnish with fresh basil and serve over pasta, rice, or mashed potatoes.

Notes

For richer flavor, add a splash of white wine to the sauce. Store leftovers in the fridge up to 4 days or freeze for up to 2 months.
