- Brown sausage in a skillet, drain excess grease.
- Add onions and sauté until softened; stir in garlic.
- Transfer sausage, onions, and garlic to Crock-Pot.
- Add potatoes, sun-dried tomatoes, seasoning, salt, pepper, and broth.
- Cook on Low for 6–7 hours or High for 3–4 hours.
- Stir in kale and heavy cream; cook 15–20 minutes longer.
- Serve warm with Parmesan if desired.
Notes
Add kale at the end for best texture.
