Ingredients
  

Main Ingredients
  • 1 lb Italian sausage mild or hot
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 4 medium potatoes, thinly sliced
  • 1 cup sun-dried tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 3 cups chopped kale
  • 1/2 cup Parmesan cheese optional

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Brown sausage in a skillet, drain excess grease.
  2. Add onions and sauté until softened; stir in garlic.
  3. Transfer sausage, onions, and garlic to Crock-Pot.
  4. Add potatoes, sun-dried tomatoes, seasoning, salt, pepper, and broth.
  5. Cook on Low for 6–7 hours or High for 3–4 hours.
  6. Stir in kale and heavy cream; cook 15–20 minutes longer.
  7. Serve warm with Parmesan if desired.

Notes

Add kale at the end for best texture.
