Ingredients
  

Stew Base
  • 2 lbs beef stew meat, cubed
  • 4 cups potatoes, diced
  • 3 medium carrots, sliced
  • 2 stalks celery, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 2 tbsp flour
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 2 whole bay leaves
Optional Add-ins
  • 1 cup peas add at end
  • 1 cup mushrooms optional

Equipment

Method
 

  1. Brown beef in olive oil and transfer to crockpot.
  2. Add potatoes, carrots, celery, onion, and garlic.
  3. Whisk broth, tomato paste, Worcestershire, flour, and spices.
  4. Pour over ingredients; add bay leaves.
  5. Cook on LOW 7–8 hours or HIGH 4–5 hours.
  6. Add peas in the last 15 minutes.
  7. Serve hot with parsley.

Notes

Mash some potatoes to thicken naturally if needed.
