- Dice the onion and carrots and mince the garlic.
- Add lentils, chickpeas, onion, carrots, garlic, diced tomatoes, and broth to the slow cooker.
- Stir in olive oil, cumin, paprika, turmeric, coriander, salt, and pepper.
- Cook on low for 6–7 hours or high for 3–4 hours until lentils are tender.
- Stir in lemon juice before serving.
- Garnish with fresh cilantro and serve warm.
Notes
Add spinach, kale, or dried fruit like apricots for extra Moroccan-inspired flavor.
