Ingredients
  

Soup Base
  • 4 russet potatoes peeled and diced
  • 3 cups broccoli florets
  • 1 cup shredded carrots
  • 1 onion diced
  • 3 cloves garlic minced
  • 4 cups broth chicken or vegetable
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.5 tsp dried thyme
  • 0.25 tsp onion powder
To Finish
  • 1 cup heavy cream
  • 2 cups cheddar cheese freshly shredded
  • 2 tbsp butter

Equipment

  • Slow cooker
  • Potato masher

Method
 

  1. Add potatoes, broccoli, carrots, onion, garlic, broth, and seasonings to crockpot.
  2. Cook on LOW 6–7 hours or HIGH 3–4 hours.
  3. Mash half the potatoes to thicken.
  4. Add cream, butter, and cheddar; stir until melted.
  5. Serve warm with toppings.

Notes

Use freshly shredded cheese for best texture.
