- Heat olive oil in skillet, brown sausage slices 2–3 minutes per side, transfer to crockpot.
- Add potatoes, onion, bell peppers, and garlic to crockpot.
- Stir in diced tomatoes, tomato sauce, and chicken broth.
- Season with paprika, thyme, Italian seasoning, red pepper flakes, salt, and pepper.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.
- Adjust seasoning, garnish with parsley, and serve hot.
