Ingredients
  

Salad
  • 2 cups cooked chicken breast, shredded
  • 2 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cup chopped cucumber
  • 3 green onions, sliced
  • 0.5 cup fresh cilantro, chopped
  • 0.5 cup roasted peanuts, chopped
Peanut Dressing
  • 0.33 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 clove garlic, grated
  • 0.5 tsp grated ginger

Equipment

Method
 

  1. Whisk peanut dressing ingredients together until smooth, thinning with warm water as needed.
  2. Prep vegetables and add to a large bowl.
  3. Add cooked sliced or shredded chicken.
  4. Pour dressing over the salad and toss to coat.
  5. Top with peanuts and sesame seeds.
  6. Serve with lime wedges.

Notes

Add mango or spicy peppers for a fresh twist. Store dressing separately for meal prep.
