Ingredients
  

Cucumber Avocado Salad
  • 2 large cucumbers chopped
  • 2 ripe avocados diced
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tbsp fresh dill or cilantro chopped
  • 1 small red onion thinly sliced
  • salt to taste
  • black pepper to taste
  • 1 tsp honey or maple syrup optional
  • 1 clove garlic minced, optional

Method
 

  1. Chop cucumbers into bite-sized pieces.
  2. Dice avocados gently to keep cubes intact.
  3. Whisk together lemon juice, olive oil, salt, pepper, and optional honey.
  4. Combine cucumbers, avocado, and red onion in a bowl.
  5. Add herbs and pour dressing over top.
  6. Toss gently to avoid mashing the avocado.
  7. Taste, adjust seasoning, and serve immediately.

Notes

Best served fresh because avocado browns quickly. Add extra lemon for brightness and preservation.
