Ingredients
  

Salad
  • 2 large cucumbers chopped into half-moons
  • 1 can (15 oz) chickpeas drained and rinsed
  • 0.5 cup feta cheese crumbled
  • 0.25 red onion thinly sliced
  • 3 tbsp extra virgin olive oil
  • 1 lemon juiced
  • 2 tbsp fresh parsley chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground

Method
 

  1. Combine cucumbers, chickpeas, feta, and onion in a large bowl.
  2. Whisk olive oil, lemon juice, salt, and pepper in a small jar or bowl.
  3. Pour dressing over salad ingredients and toss gently to coat.
  4. Add parsley, mix lightly, and taste for seasoning.
  5. Chill for 15–20 minutes or serve immediately.

Notes

Best served fresh but can be refrigerated in an airtight container for up to 2 days.
