Ingredients
  

Main Ingredients
  • 2 large cucumbers, diced
  • 2 cups cherry tomatoes, halved
  • 2 ripe avocados, diced
  • 1/4 red onion, sliced
  • 2 tbsp olive oil
  • 1 lemon, juiced
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper
  • 1 tbsp parsley or cilantro, chopped

Equipment

  • Large mixing bowl
  • Cutting board
  • Chef’s knife
  • Small bowl for dressing

Method
 

  1. Dice cucumbers and tomatoes; slice red onion.
  2. Dice avocados just before assembling.
  3. Combine vegetables and avocado in a mixing bowl.
  4. Whisk olive oil, lemon, salt, and pepper together.
  5. Pour dressing over salad and toss gently.
  6. Garnish with fresh herbs and serve immediately.

Notes

Add extra lemon juice to keep avocado from browning.
