- Line a 9x13-inch pan with parchment paper and set aside.
- In a large saucepan, melt butter over low heat. Add marshmallows and stir until smooth.
- Remove from heat and stir in vanilla extract and chopped cherries.
- Add Rice Krispies cereal and stir until evenly coated.
- Press mixture evenly into pan without compacting too tightly.
- Melt chocolate chips with coconut oil in a microwave-safe bowl, stirring until smooth.
- Spread melted chocolate over top, garnish with cherries or white chocolate drizzle, and let set.
- Slice into squares once chocolate is firm.
