Ingredients
  

  • 6 cups Rice Krispies cereal
  • 4 cups mini marshmallows
  • 3 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1/2 cup maraschino cherries finely chopped, patted dry
  • 1 cup semisweet chocolate chips for topping
  • 1 tbsp coconut oil or shortening

Method
 

  1. Line a 9x13-inch pan with parchment paper and set aside.
  2. In a large saucepan, melt butter over low heat. Add marshmallows and stir until smooth.
  3. Remove from heat and stir in vanilla extract and chopped cherries.
  4. Add Rice Krispies cereal and stir until evenly coated.
  5. Press mixture evenly into pan without compacting too tightly.
  6. Melt chocolate chips with coconut oil in a microwave-safe bowl, stirring until smooth.
  7. Spread melted chocolate over top, garnish with cherries or white chocolate drizzle, and let set.
  8. Slice into squares once chocolate is firm.
